It’s velvety and heavenly and fabulous as a post-run treat. Or just a healthy snack since it has a nice amount of protein and packs in the produce – pumpkin, carrots, and bananas!
½ cup pumpkin puree
1 carrot, roughly chopped (raw or steamed)
½ cup Cabot 2% Plain Greek-Style Yogurt
½ small banana (preferably frozen)
¾ cup coconut water
½ tsp ground cinnamon
⅛ tsp ground cloves
⅛ tsp ground ginger
Dash of nutmeg
Dash of allspice
1 tablespoon orange or lemon juice (optional)
1 tablespoon maple syrup or honey (optional)
