6 ounces Cabot Pepper Jack, shredded (about 1 ½ cups)
8 ounces light cream cheese, softened
¼ cup salsa
¾ cup corn kernels
¾ cup black beans
Chopped green onions (topping)
Serve with crackers or fresh vegetables
PREHEAT oven to 350°F.
BEAT cream cheese and salsa together until smooth. Stir in cheese, black beans, and corn.
SPOON into 1 quart baking dish. Bake for 12-15 minutes.
SERVE warm with crackers or fresh vegetables. It can also be served cold.
