This wholesome sweet potato casserole is easy to make and the kids will enjoy it too. Using Cabot Sharp Cheddar and Cabot Greek Yogurt this recipe is nutritious and delicious. If preparing with the kids in mind, this recipe makes about 8 infant or 4 toddler servings. Enjoy!
COVER sweet potato slices with water in a medium saucepan; bring to boil and let cook just until tender. Drain well.
RETURN to pan or bowl; add cheese and yogurt and mash/stir with fork or spoon until smooth and blended. (Alternatively, puree in blender or food processor.)
SCOOP a tablespoon or so onto small plate and form into rectangle or other simple shape.
COVER entire top with cereal for mini “casserole”.
