2 ripe papayas, peeled, seeded and finely diced
1 mango, peeled, seeded and finely diced
Juice of 3 limes
4 garlic cloves, minced
2 shallots, minced
2 ripe tomatoes, finely diced
¼ cup chopped fresh cilantro
Salt and freshly ground black pepper to taste
COMBINE all ingredients; refrigerate until serving time.
