We ran a Facebook contest to find the best recipe featuring Cabot Cheddar for National Cheese Day. We had so many great entries – we couldn’t choose just one! Our winners are: Most Mouthwatering: Tuscan Cheddar and Spinach Burger by Lisa C. AND Most Creative: The Simplest and Fastest Grilled Cheese Ever by Arthur F.
1 pound fresh spinach
2 pounds lean ground beef
½ cup dry breadcrumbs
2 ounces Cabot Hand-Rubbed Tuscan Cheddar, grated (about ½ cup) plus slices for top
⅛ teaspoon kosher salt
⅛ teaspoon ground black pepper
1 clove garlic, minced
1 tablespoon balsamic vinegar
PUT spinach in large bowl and cover with plate or plastic wrap; microwave for several minutes or just until wilted. (Or steam in saucepan.) Let cool, then chop.
COMBINE spinach with remaining ingredients. Shape into 8 burgers.
GRILL to desired degree of doneness, then top with sliced cheese and cover until melted.
SERVE on buns if desired.
These burgers were AMAZING!! I may never be able to make plain ones again!! Makes 90 percent beef so moist and juicy when it is usually dry as a burger alone.
