1 12 ounce bag of tortilla chips
1 15 ounce can black beans, drained and rinsed
2 – 7 ounce packages of Cabot Vermont Sharp Cheddar Slices
½ cup Cabot Sour Cream
2 jalapeños, sliced
1 small red onion, chopped
1 medium tomato, chopped
3 scallions, sliced
¼ cup chopped cilantro
Prep: 25 mins | Cook: 5 mins | Total: 30 mins
PREHEAT oven to 400°F. Spray a baking sheet or oven safe platter with nonstick spray. While the oven preheats, assemble the nachos.
PLACE half of the chips in a single layer onto the prepared baking sheet or platter. Top with half the black beans and arrange half of the cheese slices in a single layer on top. Repeat layers with remaining chips, beans and cheese.
BAKE until the cheese is melted, about 5 minutes. Top with remaining ingredients and serve immediately.
