4 ounces Cabot Monterey Jack, grated (about 1 cup)

COMBINE orange juice and water in a large saucepan; bring to boil.
ADD rice, stir once and cover pan. Reduce heat to medium-low and simmer for about 20 minutes, or until all liquid has been absorbed. Remove from heat and let stand for 5 minutes.
