1 cup orange juice
¾ cup water
1 cup uncooked basmati rice
2 cups diced cooked chicken breast (about 1 pound raw)
4 ounces Cabot Monterey Jack, grated (about 1 cup)
½ cup chopped dried apricots (about 12)
⅓ cup slivered almonds, toasted
Salt and ground black pepper to taste
After crossing the finish line, replenish your body and soul with this one-dish carbohydrate-packed meal. Chicken and cheese provide needed protein, while apricots and orange juice deliver a punch of potassium – crucial nutrients for sports recovery.
COMBINE orange juice and water in a large saucepan; bring to boil.
ADD rice, stir once and cover pan. Reduce heat to medium-low and simmer for about 20 minutes, or until all liquid has been absorbed. Remove from heat and let stand for 5 minutes.
FLUFF rice with fork. Mix in chicken and cheese. Gently fold in apricots and almonds and season with salt and pepper. (Recipe can be made a day in advance and reheated in microwave.)
