¼ cup Ocean Spray Cranberry Apple Juice Cocktail
1 teaspoon cornstarch
4 ounces Cabot Mild Cheddar or Cabot Monterey Jack, grated (about 1 cup)
Pinch of grated nutmeg
Fresh or dried fruits and whole wheat “dipping” pretzel sticks
STIR together juice and cornstarch in a small bowl until cornstarch is dissolved (tilt bowl to make sure no lumps remain).
MICROWAVE on high power until boiling and thickened, about 40 seconds. Whisk in cheese until well combined.
RETURN to microwave for 5 to 10 second intervals or just until cheese is melted and blended (don’t overheat).
SERVE with fruits and pretzels for dunking.
