2 large eggs (or ½ cup egg substitute)
2 tablespoons milk
¼ cup grated Cabot Smoky Bacon Cheddar
Salt, preferably sea or kosher, to taste
Ground black pepper to taste
BEAT together eggs and milk with fork in a microwave-safe cup or bowl. Stir in cheese.
COVER loosely with plastic wrap (to prevent splatter).
MICROWAVE on high power for 40 seconds. Stir to break up clumps.
RECOVER and microwave for 30 seconds longer, then stir again. If not fully set, microwave for 15-second intervals, being careful not to overcook.
SEASON with salt and pepper.
