COMBINE cottage cheese, brown sugar and vanilla in a blender or food processor; process for 1 to 2 minutes or until completely silken and smooth.
PLACE about ¼ cup cake cubes in bottom of four (8-ounce) glasses or goblets. Top with about 2 tablespoons of fruit followed by about 1 ½ tablespoons of brown sugar cream.
REPEAT layers. Top with remaining fruit. Serve immediately or cover with plastic wrap and refrigerate until serving time.
